Mandarin Ginger Salad

1 cup Romaine Lettuce, chopped

2 oz. Merrimack Micro Salad Mix, or variety of choice

1 small can Mandarin Oranges

1/3 cup Sliced Almonds

1/3 cup Toasted Coconut

Vinaigrette to taste

Grilled Chicken, optional

Ginger Vinaigrette Recipe: Just mix these ingredients together to make the perfect salad pairing.

¼ cup rice vinegar

1 ½ tablespoons sugar

1 tbsp finely grated fresh ginger

1 clove minced garlic

¼ cup olive oil

Kosher salt and freshly ground pepper
